Look for A beige foam across the surface, smelling of bread. No foam means dead yeast or milk that went in too hot; start over with fresh yeast before it costs you the overnight.

Pearl Sugar, the Iron & the Caramel
Why this works The caramelized pearl sugar IS the dish, so it deserves its mechanics spelled out. Pearl sugar is compressed pellets of sugar, hard enough to survive kneading and slow enough to melt that they reach the iron intact; against 370°F plates they cross sucrose's melting point near 320°F and run molten, caramelizing into liquid pockets inside the crumb and a lacquer where they touch metal. That is why the pearls go in cold and last: a warm dough starts dissolving them, and dissolved sugar is syrup that scorches instead of pockets that shine. The counter rise is the second act of fermentation; the fridge stalled the yeast, and a cold, dense ball hits the iron as a puck, so the balls get 45 minutes to warm and puff before baking.
