Cured Egg Yolks
Buried in Salt and Sugar, Dried Hard, Grated Like a Hard Cheese
Yolks buried four days in salt and sugar come out amber and firm as gumdrops, then dry hard enough to grate. A fine savory snow over pasta, risotto, beans, or greens, and no dairy anywhere near it.

This started as a workaround and turned into a staple. A pareve kitchen gives up a lot of things quietly, and the one I missed most was not cheese on its own; it was the grate. The flick of the wrist at the end that drops salt and savor and a little texture over a finished plate, the thing that tells everyone dinner is done. Cured yolk does that job with an egg. Six of them cost about a dollar, the work is fifteen minutes spread across four days of the fridge doing it for you, and the jar then sits in the door for a month getting grated over everything. It is not a cheese substitute and I would not serve it on a board. It is a finisher, and on that job it is the real thing.

The Tools

The Salt-Sugar Cure
Why this works The bed does the work by osmosis. Salt and sugar dissolving at the yolk's surface create a solute concentration far higher than the inside of the yolk, so water leaves through the membrane until the pull equalizes. Over four days the yolk goes from a liquid sac to a firm amber gumdrop, its fat, protein, and glutamate all concentrated into far less volume, which is why the finished grate tastes so much bigger than an egg. The 2:1 salt-to-sugar ratio is not seasoning. Sugar is the slower, gentler osmotic agent, and it moderates the salt's pull so the yolk firms evenly through instead of case-hardening into a leathery shell over a wet center; it also leaves the cured yolk pliable enough to grate rather than shattering into shards. Weigh the bed, because a cup of Diamond Crystal and a cup of Morton's are not remotely the same amount of salt. And bury generously: a yolk with any surface exposed to air cures unevenly and dries flat on one side. FOOD SAFETY: a salt cure is not a cook. The yolks never reach a temperature that pasteurizes them, and while the cure drops water activity far enough to make this a traditional, well-established preparation, that is not the same as sterile. Use the freshest eggs you can buy, keep the cure refrigerated the entire four days, and if anyone at the table is pregnant, elderly, or immunocompromised, use pasteurized-in-shell eggs.

Deep-orange yolks cure into a deeper amber grate, which is worth paying for here since color is half the effect.

Build the bed 5 min hands-on
Whisk the salt and sugar together until completely uniform, with no streaks of either. Spread half of it in an even one-inch layer across the container. Press six wells into it with the back of a spoon, each roughly yolk-sized and about half an inch deep, spaced so they do not run into each other.
Look for The wells hold their walls when you lift the spoon. If they slump, the bed is too shallow: add more mix, level it, and press again.

Separate and bury 7 min hands-on
Crack each egg over the small bowl and separate the yolk, passing it from half-shell to half-shell or through your cupped fingers until no white clings to it. Slide one yolk into each well. Pour the rest of the salt-sugar over the top until every yolk is buried under at least half an inch. Lid on, into the fridge.
Look for A flat white surface with no amber showing through anywhere.
Take care A broken yolk cures into nothing you can grate. Separate over the small bowl one at a time so a slip costs one egg instead of six. Clinging white is the other failure: it cures into a rubbery skin around the yolk. The leftover whites keep a week covered and are a meringue or tomorrow's omelet. -

Leave the container undisturbed in the refrigerator for four full days. Do not stir it, do not check daily, do not turn the yolks.
Look for At four days the bed directly around each yolk has gone visibly damp and clumped, which is the water that used to be inside the yolk. That damp halo is the cure working.

The Dry & the Keep
Why this works The cure firms the yolk; the dry is what makes it gratable. Coming out of the bed a cured yolk has the texture of a gumdrop, which smears against a microplane instead of shredding. A few hours in very low heat, or a few days hanging in the cold dry air of a refrigerator, pull the last free water out until the yolk is hard and slightly glassy and shatters cleanly under the rasp. Low is the whole trick: above roughly 180°F the yolk's proteins start setting and you get a cooked, chalky yolk that cracks apart rather than a dried one. The fridge method is slower, needs nothing, and gives a better texture, which is the honest recommendation if you can wait. Keeping is straightforward once dried, because dropping water activity is precisely what keeps microbes from growing; wrapped and cold, a batch holds a month with no drama. The one enemy is condensation, so cool the yolks completely before they go into anything sealed, or trapped moisture will soften them back and bloom mold on the surface.

Excavate and rinse 5 min hands-on
Feel for each yolk with your fingers and lift it free of the damp bed, brushing the clinging salt off with your thumb. Rinse each one briefly under cool running water, rubbing gently until the surface is clean and no longer gritty, then pat completely dry on a towel.
Look for Each yolk lifts out whole: deep translucent amber, matte-skinned, firm as a gumdrop, with a slight give when pressed. Hold one to the light and it glows like a lozenge.

Set the yolks on the wire rack over the sheet pan, not touching, and dry in a 150-170°F oven with the door propped open on a wooden spoon for 2 to 3 hours. Or skip the oven entirely: wrap each yolk loosely in cheesecloth, tie it, and hang or rest them on a rack in the fridge for 5 to 7 days.
Look for Deep amber, faintly glassy, and hard as a caramel candy. A dried yolk clicks against the rack instead of thudding.
Take care Too much heat cooks the yolk instead of drying it, and you get a pale chalky center that crumbles rather than grating. If your oven's lowest setting runs above 180°F, do not fight it; use the fridge method, which is slower, completely hands-off, and honestly the better result. -
Cool, test the grate, store 4 min hands-on · 30 min wait
Cool completely on the rack, a good half hour. Test one against the microplane before you put anything away. Wrap the batch in parchment or cheesecloth, box it, and refrigerate; it keeps a month.
Look for Drag a yolk down the microplane and it should throw a dry fine amber snow that falls loose, not a paste that packs into the blades. Taste a pinch: salty, deeply savory, faintly sweet at the back.
Take care Wrapping them warm traps condensation, softens the yolks back, and grows mold within a week. Cool completely, and never store them airtight in plastic; parchment or cloth lets them keep breathing.

To the Table
Grate it last, over a finished plate, the way you would a hard cheese. Held over the bowl and rasped in short strokes it falls as an amber snow that melts into anything warm.
Where it earns its keep: carbonara (this book's is built around it), any pasta finished with olive oil and pepper, saffron risotto, buttered or oiled greens, a bowl of white beans, roasted asparagus, avocado toast, and a soft-boiled egg, which is funnier and better than it sounds.
Dose it like salt, not like cheese. About 6g per plate, which is four or five passes on a microplane, and taste before you add more.
Shave it instead of grating for a garnish with presence: a sharp peeler takes thin translucent petals off a fully dried yolk.
Store wrapped in parchment or cheesecloth in a box in the fridge, a month. Grate from whole yolks as you need them; a pre-grated jar loses its edge in days.

Concentrated egg yolk: mostly fat and protein, almost no carbohydrate, and rich in choline and lutein. SODIUM: the cure is the point and the yolk keeps some of it, so read this as a salty seasoning rather than a neutral garnish and pull back on the salt elsewhere in the dish.
